Yetişkin Bireylerde Beslenme Okuryazarlığının Ev Dışı Beslenme ve Besin Tercihleri Üzerine Etkisinin Değerlendirilmesi

Öz

Amaç: Bu çalışmada bireylerin beslenme okuryazarlığı düzeyinin ev dışında beslenme, eve dışarıdan yemek sipariş etme ve sağlıklı besin tercihleri üzerinde etkisinin değerlendirilmesi amaçlanmıştır.
Gereç ve Yöntem: Araştırma 18-65 yaş arasında 393 gönüllü birey ile yürütülmüştür. Çevrimiçi anket yöntemi kullanılarak katılımcıların beslenme okuryazarlığı düzeyi, ev dışı yemek yeme, eve yemek sipariş etme sıklığı ve tercihleri sorgulanmıştır. Beslenme okuryazarlığını değerlendirmek için ‘Kendini Algılayan Gıda Okuryazarlığı Ölçeği’ (SPFLS) kullanılmıştır.
Bulgular: Araştırmaya 288 kadın (%73.3) ve 105 erkek (%26.7) katılmıştır. SPFLS toplam puan ortalaması kadın katılımcıların 89.58±12.21 iken, erkek katılımcıların 87.12±15.08 olarak bulunmuştur. Ev dışı yemek sipariş verme sıklığına göre toplam SPFLS puanı karşılaştırıldığında sık yemek sipariş edenler ile hiç/nadir ve seyrek sipariş veren grubun toplam SPFL puanları arasında istatistiksel olarak anlamlı fark bulunmuştur (p0.001). SPFLS toplam puanı medyan değerin (90) üzerinde olan katılımcıların sağlıklı yiyecek tüketim sıklığı (sebze, meyve, tam tahıl ürünler ve kurubaklagiller), medyan değerin altında olan katılımcılara göre yüksek bulunurken (sırasıyla p0.001, p=0.002, p0.001), sağlıksız tercihlerin (gazlı içecekler, hazır meyve suyu ve meşrubat) tüketim sıklığı, iş/okul haricinde ev dışında yeme sıklığı ve eve yemek sipariş etme sıklığı düşük bulunmuştur (sırasıyla p=0.012, p=0.001, p=0.002 ve p=0.004).
Sonuç: Beslenme okuryazarlık düzeyi arttıkça sağlıklı tercihler yapma yönünde eğilimin arttığı görülmüştür. Halk sağlığı üzerinde değiştirilebilir bir risk faktörü olan beslenme okuryazarlığı düzeyinin yükseltilmesi ile toplum sağlığının iyileştirilebileceği ön görülmektedir.

Assessing the Effect of Nutritional Literacy in Adult Individuals on Out-of-Home Nutrition and Food Choices

Öz

Aim: In this study, it was aimed to evaluate the effect of nutritional literacy level of individuals on out-of-home nutrition, ordering food from home and healthy food preferences. Material and Metods: The study was carried out with 393 volunteers between the ages of 18-65. The nutritional literacy level of the mparticipants, the frequency and preferences of out-of-home nutrition, ordering food at homewere questioned by using the online questionnaire method. ‘The Self-Perceived Food Literacy Scale (SPFLS)’ was used to assess nutritional literacy.
Result: 288 women (73.3%) and 105 men (26.7%) participated in the study. The mean SFLPS total score was 89.58±12.21 for the female participants and 87.12±15.08 for the male participants. When the total SPFLS score was compared according to the frequency of ordering out-of-home nutrition, a statistically significant difference was found between the participants who ordered food frequently and those who ordered never/rarely and seldom (p;0.001). The frequency of healthy food consumption (vegetables, fruits, whole grain products and legumes) of the participants with a SPFLS total score above the median value (90) was found to be higher than those of the participants below the median value (respectively, p0.001, p=0.002, p0.001), while the frequency of consumption of unhealthy choices (sodas, instant juice and soft drinks), the frequency of out-of-home nutrition except for work/school, and the frequency of ordering food at home were found to be lower (respectively, p=0.012, p=0.001, p=0.002 ve p=0.004).
Conclusion: It was observed that as the nutritional literacy level increased, the tendency to make healthy choices increased. It is foreseen that public health can be improved by increasing the level of nutrition literacy, which is a changeable risk factor on public health.
