SİYEZ BUĞDAYININ SAĞLIK ÜZERİNE ETKİLERİ

Öz

Tarihi geçmişi 12 bin yıl öncesine dayanan buğday, insanların temel besin kaynaklarından biridir. Besin ve beslenme ile ilişkili sağlık sorunlarının görülme sıklığındaki belirgin artış nedeni ile, ilkel buğday türlerinin besin ögesi içeriği ve sağlık üzerine etkileri merak konusu olmuştur. Siyez buğdayı yüksek protein, doymamış yağ asitleri, fruktan ve antioksidan içeriği ile besin değeri yüksek ilkel buğdaylardan biridir. Siyez buğdayının kan glukoz düzeyi, iştah, kardiyovasküler hastalıklar ve çölyak üzerine etkileri çeşitli çalışmalarda gösterilmiştir. Bu derleme makalesinde, siyez buğdayının sağlık üzerine etkilerine yönelik yapılan çalışmaların sonuçlarının tartışılması amaçlanmıştır.
